The meal: Salmon, pan seared in Spanish olive oil and fresh lemon juice. Couscous with feta cheese, kalamata olives, basil, red onion, cucumber, lemon and olive oil dressing.

Prep time: 30 minutes (if you know where everything is in your kitchen, and you don’t spend five minutes thinking your boyfriend ate all the feta cheese).

Time saving tip: Couscous cook and cools fast. When the couscous is done, leave uncovered and add to the rest of the ingredients right before you serve for optimal cooling and no waiting.

Why this dish works: You know the two components will pair together nicely because both use olive oil and lemon juice. The fresh basil and olives, however, give the couscous really great and distinct flavors.
